week menu 5/22-28

Sunday: BBQ fresh salmon filet with basil salsa, grilled veggie and quinoa
Monday: leftovers
Tuesday: Chinese Chicken Salads
Wednesday: Turkey noodle soup
Thursday: Breakfast. Camp potatoes, eggs and sausage
Friday: Enchiladas

Recipes

BBQ salmon with basil salsa
Place fresh filet of salmon on large piece of foil
top with lemon pepper, generously
fresh dill sprigs, lemon slices and butter dabs
bbq on medium high for 20 minutes

top with basil salsa
diced tomato
sliced fresh dill
capers, with a little juice
pepper...
use amounts you like to get the taste you prefer

Chinese Chicken Salads
Top bowl/plate of 1/2 shredded lettuce and 1/2 shredded napa cabbage with scallions, almonds, chow mein noodles, mandarin oranges, shredded carrots, edemame and shredded chicken. Then toss with your favorite oriental dressing.

Turkey Noodle Soup
Saute mixture of veggies (onion, garlic, carrot, celery, cauliflower and brussel sprouts, etc) then add stock and shredded meat. Simmer 10-15 minutes. My mom makes a turkey soup base after a big turkey dinner then freezes it, so all we have to do is add veggies and noodles. If you are adding noodles, cook them separately until 1-2 minutes before al dente, then add to soup.

Camp potatoes
slice potatoes in 1/4 inch rings, and slice onion in 1/4 inch rings. Then add to pan with small amount of both butter and olive oil. Layer potatoes and onions, then cover and cook over medium-high heat, turning every 5-10 minutes, for about 20-30 minutes.
Saute up some sausage patties, and make a few eggs over easy...yummy

Enchiladas:
Make a mixture of shredded meat, drained and rinsed beans, corn, olives, green chilies, 1 large scoop sour cream and a half can of cream of...soup, then add a couple spoonfuls of the enchilada sauce of choice to the mixture, so that the flavor is all through the dish.
Fill each tortilla, corn or flour, with mixture and a sprinkle of cheddar cheese. Place in greased dish, with a small amount of enchilada sauce on the bottom. Then top each layer of rolled enchiladas with cheese and sauce, repeat.
Bake 20-25 minutes at 325.
